The course opens for a new intake of 30 students every 4 months.

The course will be taught as : 

• 4 Weeks Online Education

• 4 Weeks Practical Work


Live classes will be scheduled Monday to Friday for 4 hours each day. Our head pastry chef will go through the curriculum, theory and demonstrations with the opportunity for students to interact and ask questions. 

Your schedule will be given on a term to term basis.

For those in employment and unable to attend, recordings of the classes may be made available. 


Once approved as safe by the government, post-Covid, students will be able to come in to our brand new kitchen and begin their practical hands-on training. 

These group classes will be 4 hours in length and scheduled throughout the day - morning, afternoon and evening. 

Evening classes will be mainly allocated to those in employment with only evening availability. 

Those who make it to the end of the course and achieve the necessary results will receive an Ofqual UK accredited Certificate in Home Pastry and Confectionery Making from Sweet Emmanuel

There is further option of having us validate it for upgrade to the prestigious London City and

Guilds Certificate in Confectionary.

Furthermore, the first 10 “Best” will be offered the opportunity of Work Experience in a professional working kitchen environment, in the kitchen of our new bakery store with a full-time job available after.

There are 2 key foundations to Patisserie & Confectionary, which we will teach you. Once you know these, you will be able to apply them to almost anything

1) The Base

Students will learn to make bases of all kinds, for example:

Sponge cakes, Cookies, Pastries, Tarts, Rolls

You will learn to work with different types of flours, creams, pastry types, shapes, sizes and ingredients.

2) Decoration

You will learn how to :

Decorate Cakes. Make various Creams and Icing. Finish cakes and pastries ready for Sale. Decorate all kinds of Chocolates.

Once Completed

By the end of the course students will learn how to make cakes and pastries of all kinds, including :

• Fresh Cream Cake, Wedding Cake, Birthday Cake, Cake Rolls

• Danish Pastries, French Puff Pastries, Eclairs, Profiteroles

• Cookies, Confectionary

While also learning : 

• How To Navigate A Professional Kitchen, Knowing The Machinery And Tools

• The Details, Characteristics And Uses Of Various Ingredients, Raw Materials And Foods

• The Magic Behind How Certain Ingredients Work Together And How They Can Be Used

• The Knowledge Of How To Design, Decorate And Make Your Own Creations

This comprehensive culinary course is recommended for students with strong ambition to enter the industry, who want to gain top class knowledge and skill, and discover a way to express their culinary creativity.

Our founders have a combined experience of decades in the Patisserie and Confectionery industry, having built and sold many successful patisseries on a number of occasions.

We are finalising the details as we prepare to launch our new North London Patisserie and online store, Sweet Emmanuel (insert web address), where customers can enjoy a drink or fresh made delights in store or order them online to be delivered to enjoy at home. 

While preparing the business we noticed an opportunity for us to help out our community and give back. With many people struggling to find work, and some looking to supplement their income with home businesses, we knew we could offer people the opportunity to learn a skill to a professional standard quickly and affordably. 

So we set up the Sweet Emmanuel School

£1800 ex.Vat

Pay 50% deposit and remaining 50% to be paid before 3 weeks of course starting (unless alternative agreement in place)
